Bamboo mat (Makisu) for Maki  

Makisu is a kitchen utensil that appeared in Japan at the end of the Edo period (19th century). It is essential for making beautiful makis, but it can also be used to make certain forms of omelettes or cakes.


Why bamboo? 

Of course, there are Makisu made from several materials such as plastic, silicone, etc. but clearly bamboo remains the best choice. It is a flexible material, comfortable in the hand and easy to handle, not to mention that it has been the historical material of choice for making Makisu since the 19th century.

The Makisu selected by Shiori is made from natural bamboo without the use of artificial colors.

The material used is Moso bamboo (孟宗竹) from Kumamoto prefecture.
This mat is made of bamboo fibers carefully woven one by one by a Japanese craftsman. Production also takes place in Kumamoto Prefecture.
Nowadays, it is now rare to find a Makisu craftsman in Japan.

The fineness and smoothness of the surface of the rollers are different when they are carefully made by hand. Since a Maki mat is not a product that can be replaced often, choose it of the best quality possible.

It will develop a patina over time and you can use it for a lifetime.

Note :

Bamboo is a natural material, so there may be pieces of fiber that come loose, then simply remove them.

The green side is rolled inward.

Kikusui is a family business founded in 1960. In addition to picks and toothpicks, its specialty is Japanese cake picks (Kuromoji-youji) essential for eating the wagashi during the tea ceremony. 

The company searched all over Japan for mountains where Kuromojis (tree name Lauraceae family) grow naturally and negotiated with the owners to establish a route to directly obtain the wood necessary for production.

Currently, they are working to convey the beauty and pride of products made in Japan in cooperation with passionate artisans.
