Panna cotta au Matcha

For a change of habit, why not try a Matcha Panna Cotta? I like this bittersweet taste, the sweetness of the cream and the bitterness of the Matcha. It’s a quick and simple recipe, I can make it in 15 minutes. You can enjoy the joy of tasting 1 hour later.

Ingredients for 4 persons

1 C. Matcha tea
40 g of sugar
15 cl of milk 
20 cl of crème fraîche (or soy milk)
6 g of powdered gelatin
2 tbsp. tablespoon of water

Preparation

1. In a small container, pour 6g of powdered gelatin and 2 tbsp. of water and let it swell for 2 to 3 minutes.

2. In a saucepan, put the Matcha and the sugar then mix well with a whisk. Pour in the milk little by little while whisking.
Heat this preparation over low heat then add the prepared gelatin. Continue mixing until the gelatin dissolves but be careful! Don't bring it to a boil!

3. Pass this preparation through a strainer, add the crème fraîche, mix well.
Pour the mixture into four containers or molds. 

4. Leave to cool in the refrigerator for at least 1 hour.

Enjoy with whipped cream, with red fruit coulis or, to stay in the Japanese spirit, with Anko (red bean paste).
