Japanese-style potato soup

A lighter but tasty potato soup. It’s a French-Japanese version of soup. Recommended for cold days during the change of season.
Ingredients for 4 persons
4 potatoes (400g)1 onion
1 C. tablespoon of white miso*
1 C. olive oil
400 ml soy milk
400 ml of water
2 tbsp. teaspoon of Dashi powder*
Preparation :
1. Finely cut the onion. Peel and cut the potatoes into slices.
2. In a saucepan, pour a drizzle of oil, brown the onion over low heat.
When the onion is nicely colored, add the potatoes. Pour in the water and the dashi. Leave to cook for about 20 minutes.
3. When the potatoes are cooked, add the soy milk and miso. Mix everything. Serve hot.
