Ingen Shira-ae: green bean salad with tofu

In Japan you can easily find Souzai dishes in delicatessens or caterers in cities.
This is a “Souzai 惣菜” dish, meaning that it is a family Japanese dish, but also authentic and traditional (a bit like gratin dauphinois for you French people).
The recipe does not use oil or contain gluten and is very suitable for vegetarians.
It’s a perfect side dish.
Ingredients for 4 persons
250g green beans
240g silken tofu
2 tsp. white miso
1 tsp sugar
1 tsp soy sauce
Preparation :
1. Wrap the tofu with absorbent paper then let it rest for a few tens of minutes.
2. Hull, cut in half if necessary and wash the beans. Blanch them in boiling salted water for 10 to 12 minutes (depending on the thickness of the beans). Then immerse them in cold water. Drain them well.
3. In a salad bowl, mix the miso, sugar and soy sauce well with a whisk. Add the well-drained tofu. MelkWith GOOD until you obtain a homogeneous dough.
4. Add the beans and mix roughly.
