Okonomiyaki

As its name suggests in Japanese, okonomiyaki means “cook as you want“. There are no rules for ingredients.
I made a recipe that tastes close to the real thing okonomiyaki Japanese but adapted for the French.
It is one of the daily dishes for the Japanese, like pizza for the Italians or crepe for the French.

Ingredients for 4 persons
400g braised green cabbage (about 10 leaves)
200g flour
2 eggs
Un demi-sachet (4g) de HONDASHI® + 3 tbsp. hot water soup
20 cl of water
200g bacon strips
50g grated Emmental
Colza oil
Recommended sauce and finishing
– Sauce Okonomi
– Mayonnaise
– Katsuobushi (kind of thin strips of dried bonito)
– Ao nori (seaweed powder)
Preparation
Wash the cabbage and cut it into strips.
In a large salad bowl, pour 3 tbsp. soup of hot water, mix well the HONDASHI®.
Then add the flour, 20cl of water, the eggs, and mix well with a whisk.
Add the cabbage strips and the bacon, the grated Emmental, mix well with a tablespoon.
In a well-heated pan, pour a spoonful of rapeseed oil.
With a ladle, pour into the pan (to make an Okonomiyaki approximately 17 cm in diameter and 1.5 cm thick)
Cook for about 5 minutes over medium heat.
Then turn over and cook for about 5 more minutes.
For finishing
Put la sauce Okonomi and mayonnaise on topOkonomiyaki then spread them with the back of a spoon.
Decorate with the strips of katsuobushi and D'ao nori.
