Fish steak with Amazu-an sauce

In Asian countries, many dishes are cooked with sweet and sour sauce. In Japan, this sauce is called Amazu-an.
Here I share with you a recipe adapted for the French.
The ingredients are easy to find and the recipe is simple to prepare. 

Ingredients for 4 persons

4 fish steaks (cod, salmon, etc.)
1 onion
1 carrot, washed and peeled
1/2 red, 1/2 yellow and 1/2 green bell pepper, seeded

Homemade Sauce
3 tbsp. rice vinegar soup 
3 tbsp. soy sauce soup
3 tbsp. white wine soup
2.5 tbsp. sugar soup
1 C. ketchup soup

for finishing (An sauce)
2 tbsp. potato starch coffee
5 cl of water

Colza oil

Preparation

For the Amazu sauce

Cut the carrot, peppers and onion into thin strips.


In a pan, pour 1 tbsp. soup of oil then cook them.

Add all the ingredients for the Amazu sauce. Leave to cook for 2 minutes.

In a small container, mix the potato starch and water well with a spoon to obtain a smooth, opaque liquid, then pour into the pan.

Stirring regularly, cook until the sauce becomes transparent.

For the fish steaks

In stove heated, pour 1 tbsp. soup of oil, place the fish fillets, skin side down, then cook for about 5 minutes (depending on the thickness of the fillet) over medium heat.

Carefully flip and cook for another 3 minutes on the other side.

[Perfectionists can cook fish à la meunière (floured)]

Pour the Amazu-an sauce over the fish.
Enjoy quickly while it’s hot, accompanied by rice.
